Oh bacon, how I love thee

After giving myself a mild (?!) case of food poisoning yesterday, today is cooking day. The neighbor downstairs just had a baby, so I am going to make two big pans of chicken pot pie and brownies for them. Of course, I am out of stock, so that is going now.

This is the recipe I am using. I make it pretty much as written, except that I use chicken that I have cooked and stored in the freezer and homemade chicken broth. Oh, I also am topping their pot pie with pie crust so they can freeze it. If I do top it with biscuits, I use this recipe, replacing the butter with olive oil. You know, just like the original.

So remember kids - bacon can and does go bad. If there is any doubt as to whether the package in the fridge is the one that is 4 days old vs. the one that is 4 weeks old, always assume weeks.
